Quick and easy Chorizo Fajita Recipe

I love fajitas and love chorizo sausages and I love this recipe I put together last week:

Ingredients:

1 x pack (approx 6) good quality chorizo sausages

2 x small white onions

Handful cherry tomatoes

1 x red capsicum pepper

Sour cream

Tortillas

Shredded lettuce

Grated cheese

Method.

Fry sausages in a pan until almost cooked, add in the 2  x onions (quartered), chopped pepper, halved tomatoes and cook on a high heat until onions have caremalised and blackened (approx 5-10 mins) Serve straight away in the tortilla wraps and sprinkle with cheese and lettuce. YUM!

I thought I’d pop in and say a quick ‘hello’. We are having a lovely Christmassy time, seeing family and friends, eating lots of lovely food and enjoying being together. ‘T’ loved opening her stocking and discoving some of the gifts from Father Christmas. I think her favourite is a torch which she loves to shine in her new play frame with playsilks that Father Christmas also brought her. The dinner was a bit of a fiasco for a moment as the lamb had gone off (?!?!?!!) my husband and Mum were brave (or silly?) enough to eat the middle part  that was okay but I didn’t fancy it so had a vegetarian option (fine by me – felt like old times!)

The day was so nice with my Mum, husband and daughter here in our home. We went out for a walk in the afternoon and then settled down on the sofa in the evening once ‘T’ was tucked up in bed with red wine and SO much laughter,  it really was a funny evening and the 3 of us laughed so much at silly things we were talking about.

Things are going to slow down a little here on the blog, there is going to be so much to do with the sorting and organising for the big move in April, plus things will slow down again when we actually move, but please keep dropping by, I’ll be in this space as much as I can.

Winter hats and a winner!

I just had to share these sweet little hats that ‘T’s Grandma knitted for her and her dolly. She actually made them a couple of weeks ago I have just been a bit slow at getting around to blogging about them. ‘T’ was pleased with her hat (she has a bit of a thing for hats, and mittens, I winder if that will turn into handbags and shoes as she gets older?!). Her face was such a picture when she saw that Dolly had a matching hat and they both wore them whilst ‘T’ looked at herself and Dolly in the mirror wearing them, it was such a sweet smile on her face…..

Every now and then I hear ‘T’ calling out “Doy??!! (dolly) Where are you? Hat on?” She’s such a cutie (not that i’m biased in any way of course!)

It’s begining to feel a lot like Christmas…..

The tree is up, the paperchains are done, I’ve made a wreath for the door, made some gifts, wrapped the presents, baked mince pies, made a gingerbread house and………………… we got our perminent residency visa for Australia!!! (What a Christmas gift?!)

I’m glad I’ve been up together with getting Christmas organised as since getting the visa I have been going through random drawers, cupboards and piles of things, sorting for giving to charity shops/ebaying/freecycling or keeping. To be honest I’ve been doing this every now and then for months, but now I can really begin to sort everything out (though I haven’t braved the shed yet?!)

Christmas gifts

I always have this same feeling at Christmas where I worry that I haven’t provided ‘enough’ when it comes to presents. I’m so keen on keeping things small and few when it comes to toys and gifts for ‘T’ for so many reasons, and to be honest there isn’t a lot I want or need, I think this rings true for a lot of people as we are now in an age where we have bulging wardrobes, choices of toiletries, and affordable treats and nibbles to eat. We’re also really having to watch the pennies and all those friends, children, nieces, family members etc. all adds up. I’m giving away a few home-made gifts this year and I’m hoping that they’ll be ‘enough’ I’ve made them all with lots of love and thoughts but I can’t help worrying still!

Anyway, here are some of the gifts I have made this year for Christmas to give away as gifts:

Wool felted soap:

Washcloths: (not the one pictured below but don’t want to give the surprise away!)

And not forgetting the hand and foot prints that ‘T’ made – she even did the wrapping paper!:

This cold weather….

We went out for a walk yesterday, there was a heavy frost the night before so everything was sparkly and cold. We went to say hello to some nearby horses and popped into the the library where ‘T’ did some drawing and reading. I love days like this when it’s cold outside and things are covered in frost, makes me feel snug in my warm coat and glad to get back indoors, switch on the Christmas tree lights and have a warm cup of coffee.

Both ‘T’ and I have a cold at the moment so antibiotics for me and lots of cuddles for ‘T’. Hopefully all of the germs will pass before Christmas is here, I’m not very patient – especially when it coems to feeling rough. Must be this cold weather.

The Winter garden

I thought I had better take a peek at how the vegetables are doing in the garden. I’m missing having an excuse to go outside now that we no longer have a rabbit to go out and see every day.

We currently have growing:

  • Purple sprouting broccoli
  • White cabbage
  • Cauliflower
  • Brussel Sprouts
  • Broccoli

The rest of the garden is looking a bit drab and depressing as it always does this time of year though it’s been so mild that the crocus and dafffodils are trying to grow. Luckily we have had a couple of frosts that should hold them off and make the Brussel Sprouts taste better on Christmas Day.
