We were kindly given a courgette which was grown by a friend of my husband, half of it was used in a soup and with the other half I made these mini pizzas which were a hit all round (even me who HATES courgette!)
Courgette slices – approx 1cm thick
Lightly fry the courgette slices for a few minutes each side. Lay on a grill, top with tomato sauce, grated cheese and other toppings of your choice. Grill until cheese has browned and eat straight away!
