This recipe is great and a lovely way of making veg more interesting, it is very similar to tempura – the batter is really light and not at all filling or gloopy. The recipe was very easy and quick and I think it would go really nice with fish or chicken too. I used broccoli, carrrots and cauliflower to make it more varied and served it with some spiced rice and grilled mackerel. Delicious!
