Veggie Puff Pizza

This is how I used up the rest of the puff pastry – rolled it out, topped with tomato puree, mozzarella, spinach, mushrooms, peppers and  olives and baked in the oven for 20 mins – great for all the family and was cooked in the morning ready for dinner that night so nothing to prepare in the evening (just the way I like it!) We ate it with babycorn, coleslaw and salad.
